Lemon Basil Soda
A fast and easy refreshing summer beverage to make those 90 degree days a little more bearable! The basil syrup and lemon juice can be adjusted in the recipe if you prefer it sweeter or more tart.
Lemon Basil Soda
40 g lemon juice (1 1/2 oz)
60 g basil simple syrup (2 oz)
Sparkling water or Club soda
Fill a 16 oz glass about half way with ice. Pour simple syrup and lemon juice over ice. Top off with sparkling water and lightly stir. Add lemon slices and a sprig of fresh basil.
Basil Simple Syrup
125 g water (4oz)
100 g sugar (4 oz)
12 g fresh basil (4 oz)
Heat water and sugar in a pot until simmering. Add basil leaves, turn off the heat and infuse for 15 minutes. Strain out the basil leaves and reserve in the refrigerator.
