Chocolate Peppermint Crinkles

It doesn’t get any better then a cross between a brownie and a cookie, along with one of my favorite flavor combinations ever.

Chocolate Peppermint Crinkles

300 g dark chocolate

85 g butter

3 eggs

200 g granulated sugar

1/4 tsp salt

1 tsp baking powder

45 g all purpose flour

227 g chocolate chips

115 g crushed peppermint candies or candy canes

In a double boiler melt the dark chocolate and butter together. Set aside to cool slightly.

Whip the eggs and sugar together until tripled in volume, add the melted chocolate mixture all at once and mix until combined.

Add all the dry ingredients along with the chocolate chips and crushed peppermint. Once all ingredients come together it should have a brownie batter consistency. Cover and chill batter for 30 minutes to an hour.

Preheat oven to 350 degrees Fahrenheit. On a parchment lined baking sheet, scoop cookies about 1 TBL size each onto the pan. Making sure they are each 2 inches apart, bake for 10-12 minutes or until set around the edges. Do not over bake, these cookies are meant to be chewy and brownie like.
