This drink is beautiful, and yes I know what you are thinking, who cares how pretty it is, i just want it to taste good. Well good news friends, it has both qualities. This is such an impressive drink and will really wow whoever you make it for.
So what is butterfly pea flower exactly?
It’s a caffeine free herbal tea, commonly known as blue tea. It is derived from a plant that is most common in south East Asian countries. It has a distinctive tint from the deep blue color of the petals. The tea changes color based on the pH level of the substance that is being added to it. So for example when adding a citrus to the tea, the color will change from blue to purple.
When infusing a liquid with this tea, the more dried petals you add, the deeper the shade of blue it will turn. And the longer it sits, the deeper the color gets also.
Where can you buy it? The easiest and fastest way to get your hands on this tea is Amazon. But any type of tea shop should usually have it. Both the loose and tea bag versions will work.
How to make this cocktail
First, infuse the tequila. This step can be done ahead of time, as it is able to sit out and will not affect the final flavor of the cocktail
Make the lavender simple syrup, infuse for 5 minutes, strain, and chill.
Juice the grapefruits. I highly recommend using fresh grapefruits or citrus for any cocktail, as store bought bottled juice does not taste the same.
Stir the tequila and syrup together over ice, then top it off with the grapefruit juice and seltzer right before serving.
