Berries and Cream Popsicles
These Berries and Cream Popsicles only require a few ingredients and make a light and refreshing breakfast or snack!
Popsicles are one of my favorite things to make in the summer. They are light, refreshing, and easy to make. These are my daughters favorite snack, and one of the best things about them is they are only made with a few ingredients, so I don’t feel bad when she asks for seconds.
These popsicles aren’t loaded with sugar like the store bought kind, and are made with fresh fruit, and lightly sweetened with maple syrup. I have used a few different molds in the past and this popsicle mold is my favorite. It’s sturdy, easy to clean, easy to un mold, and the sticks do not shift around while the pops are freezing, like other types of molds.
Ingredients you will need for these popsicle
Berries - I used a combination of strawberries, blueberries, blackberries, and raspberries. You can mix and match depending on what you have on hand. Fresh or frozen berries will both work for this recipe. If using frozen, make sure they are fully defrosted before blending them.
Greek Yogurt - Using a full fat greek yogurt will make these popsicles nice and creamy.
Coconut Milk - This helps to thin out the greek yogurt slightly. I like to use unsweetened coconut milk.
Maple Syrup - The amount of maple syrup you use will vary depending on the sweetness of the berries.
Vanilla Extract - I like to add this to the yogurt mixture for extra flavor since we are using unsweetened plain yogurt for this recipe.
Tips on making this recipe perfectly
Strain the berries after they are blended. This will get rid of most of the seeds after blending and give the popsicles a smoother texture.
Add the maple syrup to taste. The sweetness of the berries will vary and you may only need a few tablespoons, so taste as you go.
Run the mold under warm water for a bit before removing the frozen popsicles. This helps to loosen them slightly from the mold.
