These Cherry Chip Popsicles make such a delicious and easy summer treat. Swirls of creamy greek yogurt, chocolate chips, and sweet cherries, it’s like a enjoying a parfait but frozen!
Ingredients you’ll need to make this recipe
Greek yogurt - I used 5% Fage Greek Yogurt, You will want something higher in fat for a creamier texture
Coconut Milk - Any brand will work for this recipe. The coconut milk helps to thin out the yogurt a bit
Chocolate - Semi sweet or dark chocolate is best for this recipe. You’ll want top chop the chocolate finely for these popsicles, large chunks will be hard to eat when frozen.
Cherries - Fresh or frozen will both work, if you are using sour cherries, you may need to adjust the sweetener to your liking.
Maple Syrup - this helps sweeten the popsicles
How to make this recipe
Cook the cherries until they start to break down.
Blend the cherries and some maple syrup until smooth.
Mix the yogurt with the coconut milk and the remaining maple syrup.
Pour both mixtures into the popsicle mold, alternating layers.
With a skewer, swirl the yogurt and cherries together.
Insert popsicle sticks, and freeze overnight.
Un mold the popsicles and enjoy!
Tips on making this recipe perfectly
Use a higher fat greek yogurt, this will make the popsicles creamy even when frozen
You can always use more coconut milk if the yogurt seems too thick to pour into the molds.
Run the mold in hot water to help loosen the popsicles for easy un molding.
Use a knife or skewer to swirl the popsicles together.
You can add more maple syrup if you would like to pops on the sweeter side.
