Funfetti Sugar Cookies
Soft an chewy and loaded with two types of rainbow sprinkles.
The most fun cookie you will ever eat!
Funfetti Sugar Cookies
230 g softened butter
100 g granulated sugar
125 g light brown sugar
1 egg
258 g all purpose flour
60 g cornstarch
2 tsp baking powder
1/2 tsp salt
80 g rainbow sprinkles
40 g nonpareils for garnish
Preheat oven to 350 degrees.
Cream butter and sugars until light and fluffy. Add egg and cream until emulsifed.
Add flour, cornstarch, baking powder, salt, and sprinkles. Mix until just combined.
While dough is still soft scoop into 1 tablespoon rounds and dip into nonpareils. Place on a parchment lined sheet pan and bake for 10-15 minutes or until set in the center.
*These cookies should not take on too much color around the edges in order for them to stay soft and chewy.
