Breakfast Fruit Pizza
The perfect addition to breakfast or brunch. This fruit pizza is so easy to make. It’s loaded with fresh fruit on top of creamy yogurt and a crunchy oatmeal crust
What fruit can you use on breakfast pizza?
Almost any type of fruit will work in this recipe but there are still a couple things to keep in mind.
Fruit always tastes best when it is is season, so what you use in the winter would probably be very different then what you would choose in the summer.
Some fruits also break down or oxidize faster than others, for example sliced apples will start to brown quickly and although they will still taste great, they may not look as nice or presentable.
Here are some suggestions for fruits that can be used
Berries - strawberries, blueberries, blackberries, raspberries
Stone fruit - peaches, plums, apricot, cherries, nectarines
Tropical fruits - mango, banana, pineapple, kiwi, passion fruit
Melons - honeydew, cantelope
Citrus segments - oranges, tangerines, grapefruits
Tips on making this recipe perfectly
Make the oatmeal crust ahead of time. The dough can be made several days in advance, and also rolled and baked the night before to save you some time.
Use unsweetened yogurt, there is sugar in the crust and enough sweetness from the fruits that it isn’t necessary to get flavored yogurt. Plus, the tartness of the yogurt really balances out the rest of the flavors.
Wash and dry the fruit that you will be using ahead of time. You don’t want any excess moisture absorbing into the crust.
Layer the yogurt and fruit as close to serving as possible. As the yogurt and fruit sit, the crust will start to soften slightly. This breakfast pizza is best served a few hours with it being assembled.

Breakfast Fruit Pizza
Ingredients
- 6 TBL (85 grams) unsalted butter, softened
- 1/4 cup (50 grams) light brown sugar
- 1/4 cup (50 grams) granulated sugar
- 1 medium egg
- zest of 1 lemon
- 1/2 cup (65 grams) all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup (90 grams) rolled oats
- unsweetened plain yogurt
- assorted fresh fruit
Instructions
- In a bowl with a paddle attachment, cream butter, both sugars, and lemon zest.
- Add in the egg and mix to combine.
- Mix in the flour, baking powder, salt, and oats.
- Wrap dough in plastic and chill for 30 minutes to an hour.
- Preheat oven to 350 degrees F. Line a sheet pan with parchment paper and set aside.
- Cut the dough in half and on a lightly floured surface roll into two 8 inch circles.
- Place on to prepared sheet pan and bake for 10-12 minutes or until lightly golden brown around the edges.
- Cool completely
- Spread a layer of yogurt on to the cooled crust and garnish with desired fruit.
