Mini Oreo Cheesecakes

How to make these cheesecakes
Line a muffin tin with muffin liners.
Place an Oreo on the bottom of each liner as the crust for the cheesecake.
Cream together the cream cheese, sugar, and sour cream. Beat in eggs.
Fold in chopped Oreos, and divide batter evenly into the 12 cups.
Bake in a water bath for 20-30 minutes
Chill cheesecakes and when ready to serve garnish with whipped cream.
Tips on making these cheesecakes perfectly
Do not over mix the batter. Too much air incorporated will cause cheesecakes to puff up when baking.
Coarsely chop the Oreos that are folded into the batter, this way they distributed evenly throughout.
Chill the cheesecakes in the muffin tin for several hours before unmolding. This will ensure that they will not lose their shape and will be easier to pull out of the pan.
Use room temperature cream cheese in this recipe, this will make it easier to cream the ingredients together.

Mini Oreo Cheesecakes
Ingredients
- 12 whole Oreos
- 16 oz (454 grams) cream cheese, room temperature
- 1/2 cup (113 grams) granulated sugar
- 1/2 teaspoon salt
- 1/2 cup (120 grams) sour cream
- 12 Oreos, coarsely chopped
Instructions
- Preheat oven to 300 degrees F. Line a muffin pan with paper liners. Place a whole Oreo in each cup, set aside.
- In a medium size bowl, beat the cream cheese, sugar, salt, and sour cream together on low speed.
- Add eggs, one at a time, mixing until incorporated.
- Gently fold in the Oreos and divide batter evenly into the muffin pan.
- Put the muffin pan onto a sheet pan, place in the oven onto the center rack. Pour hot water until it reaches about half way up the muffin pan.
- Bake cheesecakes for 20-30 minutes. You will know when they are done when they are set on the edges and slightly jiggly in the center.
- Cool at room temperature, then place in fridge for several hours until fully set.
- Serve mini cheesecakes cold and garnish with whipped cream and more Oreos if desired.
