Line the baking dish with parchment paper, for easy removal of the bars before cutting and serving.
Make sure the crust is completely cool before filling, even if the crust is warm, it can melt the cheesecake filling
Bring the cream cheese to room temperature several hours before making this recipe. This will make it easy to cream the ingredients together.
Brush the banana slices with lemon juice before assembling, this will keep them from turning brown.
Freeze the cheesecake bars for 3-4 hours before cutting. These are super creamy and fluffy, this makes it much easier to cut them into bars. They will defrost quickly once they are cut for serving.
Banana Cream Pie Cheesecake Bars
Ingredients
- 5 TBL unsalted butter, melted
- 2 cups Nilla Wafers
- 2 TBL brown sugar
- 16 oz cream cheese (2 blocks), softened
- 3/4 cup granulated sugar
- 3.4 oz (1 package) instant banana pudding mix
- 1/2 cup milk
- 2/3 cup heavy cream, whipped
- 3 bananas
- Juice of 1/2 lemon
Instructions
- Preheat the oven to 350 degrees F. Line an 8x8 inch baking pan with parchment paper, and set aside.
- In a food processor, grind the Nilla wafers until they are a fine crumb.
- In a medium size bowl, mix together the Nilla wafers, melted butter, and brown sugar.
- Press crust firmly into the prepared baking dish.
- Bake for 8-10 minutes or until lightly golden around the edges.
- Cool completely before filling.
- In a large bowl beat the cream cheese and sugar until smooth.
- Beat in the banana pudding mix and the milk until the fully combined, scraping down the sides as necessary.
- Gently fold in the whipped cream.
- Pour half of the filling into the cooled crust.
- Peel and slice the bananas, and lightly brush with lemon juice.
- Place the sliced bananas on top of the filling, placing them as closely to each other as possible.
- Top with the remaining filling and spread evenly to cover the banana slices.
- Chill the bars until set for 2-3 hours.
- Before serving garnish with extra whipped cream, banana, and Nilla wafers if desired.
