Easy bake coconut lime donuts
These easy baked donuts are made with both coconut milk and shredded coconut, scented with lime zest and dunked in a sweet coconut lime glaze. If you have ever been intimidated by making donuts, this is the perfect recipe for you.
You do not need a fryer to make them just a donut pan, I use this silicone donut mold. The batter comes together quickly, and the donuts can be ready from start to finish in under an hour!

Tips on making these donuts perfectly
Do not over mix the batter, mix the wet and dry ingredients just until they are combined. Over mixing will result in a tough and chewy donut.
These donuts are best enjoyed the day they are made.
Cool the donuts completely before glazing, or the glaze will melt and will not stick to the donut.
Using full fat coconut milk is best for this recipe
Coconut Lime Donuts
Ingredients
- 2 cups all purpose flour
- 3/4 cup sugar
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/4 cup shredded coconut
- 3/4 cup full fat coconut milk
- 2 eggs
- 2 TBL coconut oil
- Zest of 1 lime
- 2 cups powdered sugar
- juice of half a lime
- 3-4 TBL coconut milk
Instructions
- Preheat oven to 350 degrees Fahrenheit, and lightly grease a donut pan.
- In a medium size bowl mix together, flour, sugar, baking powder, baking soda, and shredded coconut.
- In a separate bowl mix together the coconut milk, eggs, coconut oil, and lime zest.
- Pour the wet ingredients into the dry and mix until just combined.
- Place batter into a piping bag and pipe into a prepared donut pan.
- Bake for 10-12 minutes or until lightly golden.
- Un mold the donuts from the pan once they are cooled.
- In a medium size bowl mix together the powdered sugar, lime juice, and coconut milk.
- Add more coconut milk as needed to thin the glaze out.
- Dip the cooled donuts into the glaze and top with more shredded coconut for garnish.
