Nut Free Rainbow Cookies

If you are familiar with rainbow cookies aka seven layer cookies, you know that most recipes contain almond paste, almond flour, or almond extract. These only have a few ingredients and are so easy to make. Typically they are done in red, green, and yellow but you can change up the colors depending on the holiday or theme you are going for.

Nut Free Rainbow Cookies

These classic Italian Rainbow Cookies have the same great taste as the original, but without any nuts!

Ingredients

Rainbow Cookies
  • 1 cup granulated sugar
  • 4 eggs
  • 1 cup unsalted butter, melted
  • 1 cup all purpose flour
  • 1 cup semi sweet chocolate chips
  • 1 TBL vegetable oil
  • Raspberry or Strawberry Jam
  • Red, Yellow, and Green food coloring

Instructions

To prepare the cookies
  1. PREHEAT OVEN TO 350 DEGREES F.
  2. WHISK EGGS AND SUGAR TOGETHER UNTIL TRIPLED IN VOLUME.
  3. FOLD IN SIFTED FLOUR, BEING CAREFUL NOT TO DEFLATE THE BATTER. FOLD IN MELTED BUTTER UNTIL COMBINED.
  4. DIVIDE BATTER INTO 3 BOWLS AND ADD FOOD COLORING TO COLOR ONE PART GREEN, YELLOW, AND RED.
  5. POUR INTO 3 8X8 INCH OILED PANS AND BAKE UNTIL VERY LIGHTLY GOLDEN AROUND THE EDGES ABOUT 8-10 MINUTES. YOU DO NOT WANT CAKES TO BE CRISPY.
  6. ONCE COOLED, UNMOLD FROM PANS. BEGIN TO LAYER EACH CAKE WITH A THIN LAYER OF JAM IN BETWEEN STARTING WITH GREEN ON THE BOTTOM, YELLOW IN THE MIDDLE, AND RED ON TOP.
  7. OVER A DOUBLE BOILER MELT CHOCOLATE AND OIL. POUR OVER COOKIES AND SPREAD UNTIL EVEN.
  8. CHILL IN FRIDGE UNTIL CHOCOLATE IS SET. CUT INTO 1X2 INCH RECTANGLES.
