Oreo Brownie Ice Cream Sandwiches
Ice cream season is in full force and what better way to enjoy ice cream then in an Oreo brownie ice cream sandwich. Fudgy brownies, loaded with Oreos, and with a scoop of ice cream in the center!
Tips on making this recipe perfectly
Make the brownies ahead of time so they have several hours to chill and firm up in the fridge. This will make it easier to layer with ice cream later.
Under bake the brownies slightly so they will stay fudgy even when frozen.
Cutting the ice cream sandwiches into squares will produce less waste. They can be cut into any shape, but squares will get you the most sandwiches in the end.
What Ingredients do you need for Oreo Brownie Ice Cream Sandwiches?
Oreos - and lots of them!
Semi sweet chocolate - chopped chocolate bar or chocolate chips both work
Butter - always unsalted butter in baking unless stated otherwise
Cocoa powder - regular unsweetened Dutch processed
Sugar - granulated white sugar
Eggs - I used medium eggs for this recipe
Flour - All purpose flour but a gluten free blend would also work
Salt - Just a pinch will enhance the chocolate flavor of the brownies
Ice Cream - I used vanilla ice cream, but some other flavors that would also taste great, cookies n’ cream, chocolate, mint chip, peanut butter, and caramel to name few!

Oreo Brownie Ice Cream Sandwiches
Ingredients
- 3/4 cup (140 grams) semisweet chocolate
- 1/2 cup (113 grams) unsalted butter, cut into cubes
- 2 tablespoons cocoa powder
- 1 cup (200 grams) granulated sugar
- 3 medium eggs
- 3/4 cup (95 grams) all purpose flour
- 1/4 teaspoon salt
- 2 cups (200 grams) Oreo cookies, chopped
- 1 quart of your favorite ice cream, slightly softened
Instructions
- Preheat oven to 350 degrees F. Line a half sheet pan (12x16 inches) with parchment paper and lightly spray with non stick cooking spray. Set aside.
- In a double boiler, melt the chocolate and butter together.
- In a mixer with a whisk attachment, whip the eggs and the sugar until light and fluffy on medium speed.
- Pour in the melted chocolate and butter all at once, and mix until combined.
- Sift the cocoa powder, flour, and salt together and stir into the chocolate mixture.
- Sprinkle half if the chopped Oreos into the prepared pan, spread the brownie batter evenly over them, and then sprinkle with the remaining Oreos.
- Bake for 20-25 minutes, or until a skewer comes out with just a few moist crumbs on it.
- Chill the brownies in the fridge for several hours or overnight.
- Once the brownies are cold, cut them in half and spread the softened ice cream evenly over one piece, place the other half of the brownie on top.
- Freeze for another hour so the ice cream can set again.
- Cut the brownies into 12 equal squares or whatever other shape you would like.
Notes:
Once ice cream sandwiches are cut, individually wrap each one in tightly plastic wrap.
Let ice cream sandwiches thaw for 5 minutes before serving.
