Peanut Butter Brownie Pie

This Peanut Butter Brownie Pie has a flakey crust, with a fudgy brownie filling and gooey peanut butter cups throughout. Everyone will love this rich and decadent dessert!

This Peanut Butter Brownie Pie is so delicious and easy to make, it can be enjoyed on its own, with ice cream, or whipped cream. My personal favorite is serving it warm with, vanilla ice cream!

This pie is easy to make, as the dough can be made ahead of time or you can even used store bought. The filling is rich, fudgy, and loaded with peanut butter cups.

Tips and variations for this recipe

  • Use a regular pie pan not a deep dish pan. This recipe was formulated for a regular pan and will not be enough batter or pie dough to fill a deeper pan.

  • Do not over bake the pie! The brownie filling will not be fudgy if it is baked too long. The pie should take between 40-50 minutes to bake through. The brownie filling will begin to crack on the surface a bit by the time it is done. It will also continue to cook once the pie is out of the oven and cooling from the carry over heat.

  • The pie dough can be made ahead of time. You should always give at least 1 hour of chilling/rest time for your dough to be able to properly rest the gluten. This will result in a flaky crust.

  • If you are not a fan of peanut butter, you can substitute them for chocolate chips, chopped chocolate, or any of your favorite candy bars would also be delicious. I used the peanut butter cups from Trader Joe’s because they melt nicely, but any peanut butter cups will work.

    * When it comes to chocolate, try and use a high quality chocolate when possible. Not only will it make the flavor better, but it will also have a smoother texture.

Ingredients

For the pie crust
  • 1 cup all purpose flour
  • 1/4 tsp salt
  • 1/4 tsp granulated sugar
  • 5 TBL unsalted butter, cut into 1/2 inch cubes and chilled
  • 3-4 TBL cold water
For the brownie filling
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup semi sweet chocolate chips
  • 1/2 cup unsalted butter
  • 2/3 cup all purpose flour
  • 1 TBL cocoa powder
  • 1 cup peanut butter cups, coarsely chopped

Instructions

To prepare the pie crust
  1. In a medium size bowl, combine the flour, salt, and sugar.
  2. With a pastry cutter, or fork, cut the butter into the flour mixture until the butter resembles lentil size pieces. You can also use a food processor for this part and pulse the butter in until it is the correct size.
  3. Slowly pour in the water a little at a time and mix the dough with your hand until it comes together. Do not pour in all the water at once, if too much is added, the dough will be too wet and will come out tough. Add a tablespoon at a time, and mix the dough until the dry bits are hydrated.
  4. Pat the dough into a flat disc, wrap in plastic and chill for at least an hour.
  5. On a lightly floured surface, roll the dough into a 10 inch circle.
  6. Line the pie pan with the rolled dough and crimp the edges or press down with a fork for a decorative edge.
  7. Chill the pie shell while preparing the brownie filling.
For the brownie filling
  1. Preheat the oven to 350 degrees F.
  2. In a large bowl whisk the eggs and sugar together.
  3. Over a double boiler, melt the butter and chocolate together.
  4. Pour the melted chocolate mixture over the eggs and sugar. Whisk together until combined.
  5. Sift in the flour and cocoa powder, and gently fold together.
  6. Stir in the chopped peanut butter cups, and pour the filling into the prepared pie shell.
  7. Bake the pie for 40-50 minutes or until set and the surface starts to slightly crack.
  8. Serve warm.
